Lady Of The Lake
INGREDIENTS
1cm Skinned Cucumber
6 Coriander Leaves
20ml Pasteurized Egg White
50ml Bombay Sapphire
20ml Elderflower Liquor
35.5ml Sweet and Sour Mix
METHOD
In a shaker add the cucumber, coriander and elderflower liquor
Muddle the three together
Add the rest of the ingredients
Shake without the ice (this will help produce a foam on top of the cocktail)
Shake with ice
Double strain into a martini glass

Flat Cap Mushroom & Goats Cheese Bruschetta
This bruschetta is part of our Tapas Board in The Lane Café Bar.
It's not your typical tapas but it tastes delicious!
INGREDIENTS
Raisin & Walnut Bread
1 x Flat Cap Mushroom
Sliver of Goats Cheese
Piece of Prosciutto
Onion Marmalade
Basil Pesto
Rocket Leaves
METHOD
Grill your mushroom for 5 minutes
Once the mushroom has cooked, place your onion marmalade, goat's cheese and prosciutto on top of the mushroom in that order
Put under the grill once again until the cheese has started to melt
Toast your bread under the grill
Toss the rocket leaves with pesto
Place your rocket leaves on top of the bread and add the mushroom, goat's cheese and prosciutto melting pot.
